Where the Grease Actually Sits
Cooking vapor leaves the line carrying grease. The filters catch the first part of it, the plenum behind them catches more, and the rest travels the length of the duct run to the fan on the roof. Wiping the hood down at the end of service deals with the part you can see and none of the part you cannot.
That is why a hood that looks clean can still be carrying a load further up the system, and why the run and the fan are part of the job rather than an extra.

Los Angeles is our main branch and runs all eleven services, cleaning and repair.
Vallejo is our smaller branch. It cleans air ducts, dryer ducts, trash chutes and grease exhausts, with gutter cleaning on some jobs — cleaning only, no repair work.
